Creamy Bacon & Cod Chowder
1 tbsp Olive Oil
4 Rashers of Bacon
300g Chopped Onion
4 Fresh Mushrooms
1 Stalk of celery (chopped)
1 tsp Crushed Chili Flakes
1 tsp Paprika
1 tbsp Chopped Fresh Dill
950ml Rich Sauces Chicken Stock
480ml Rich Sauces Fish Stock
700g Diced Potatoes
900g Cod Fillet (Diced)
700ml Single Cream
1tbsp Chopped Parsley
1tbsp Fresh Chopped Basil
1tbsp Fresh Chopped Tarragon
Heat olive oil in a large pot and sautée bacon, onion, mushroom and celery until tender.
Add chili flakes, paprika and dill then stir together before adding chicken stock, fish stock and potatoes. Simmer 10 mins and add the cod.
Simmer for a further 10 minutes.
Remove from the heat and add cream, stirring in parsley, basil and tarragon.
